Easter JOY…some fun!!

Resurrection ROLLS…This is a super fun and super yummy thing to show Jesus’ burial and RESURRECTION!!

MY ABSOLUTE FAVORITE BRAN MUFFINS…If you are a bran lover like me…you’ll never find a better recipe!! Thanks to JAN!!

Combine 2 cups boiling water with 2 cups Bran Buds cereal and let stand while you do the rest.
Mix:  1 Cup Oil

1 Cup Sugar

4 Eggs

1 Quart Buttermilk  (if you don’t have buttermilk…mix regular milk with a little vinegar or lemon juice!!)

After mixing the above, mix the following together and add to the above mixture:

5 Cups of Whole Wheat Flour (OR mix 3/4 cups Wheat Germ, 3/4 Cup Flax Seed and the rest Wheat Flour)

5 Tsps. of Soda

2 Tsps of Salt

Then Add: Bran Bud mix

Then Add:  4 Cups of Bran Flakes

**If you want, Add 2 Tsps of Almond and 2 Tsps of Vanilla…Add some berries!!

~Bake at 400* for 20 to 24 minutes

You can store this batter in the fridge for up to 6 weeks or freeze the muffins!!

Makes about 2-3 dozen LARGE muffins!!

 

The BEST Quiche Recipe…from my sweet Mentor and Sister in Christ!!

QUICHE

Preheat oven to 375 F

Crust:
You can use pastry puff or whatever crust you like:-)
For the big casserole dish (10×14″)  I just take
2 cups flour
1/2 cup butter
1 egg
a bit of water (maybe 3 Tbsp.)
italian herbs, a few dashes
some salt, maybe 1 tsp.
Knead it all together, roll out and place into baking dish

Topping (I doubled it for the 1×14″ dish size, ie. 12 eggs..):
6 eggs
1 1/2 cup milk
1/2 cup whip cream
some salt, black pepper, worcester sauce (a few drops)
dill (maybe 3 dashes)
whip it all together and add

about 1/4 lb. ham
2 cups grated cheese

Pour over crust (I don’t pre-bake it)
Bake until golden brown, big form takes about 60 minutes.
